We approach this profile with the same goals as “Catalogue”, and seek small-lot decaf offerings that are well suited to the espresso profile. As decaffeinated green fades very quickly, we buy in small quantities, as needed. The Swiss Water® plant is just down the road in Burnaby, BC and uses fresh, local water to gently remove the caffeine until the green reaches 99.9% decaffeination.
